How to recognise a quality extra virgin olive oil

Extra virgin olive oil — or EVOO — is considered the liquid gold of the Mediterranean diet. It is not only essential in cooking but also carries cultural and emotional meaning. In Mallorca, this connection is especially strong: the island has cultivated olive trees for centuries, and at S’Establit we continue that tradition so each harvest preserves its authenticity.

What “extra virgin” really means

Extra virgin is the highest classification of olive oil. To qualify, it must be made from healthy olives, harvested at the right moment and cold-pressed without additives or chemical processes. This ensures that it retains its natural aromas and properties.

At S’Establit, our organic EVOO is made with absolute respect for the fruit, following a process that blends traditional knowledge with modern techniques in our mill.

Aromas and flavours that reveal its quality

A quality EVOO is recognised above all by what it conveys to the senses. Its aroma should be fresh, evoking freshly cut grass, tomato, apple or almond. On the palate, it should show balance, with a hint of bitterness and a light peppery finish — signs of antioxidants and polyphenols.

At S’Establit, we grow three varieties that contribute different profiles: the smoothness of empeltre, the intensity of picual and the fruity freshness of arbequina.

Look at the label and the packaging

Labels and packaging also help identify a good oil. Dark glass or tins protect it from light and heat, keeping it fresh for longer. At S’Establit, freshness is essential for quality. Our oil carries the Oli de Mallorca designation of origin, certifying authenticity, as well as organic certification, reflecting our commitment to the environment.

The importance of tasting

Beyond labels and certifications, the most reliable way to recognise extra virgin olive oil is to taste it. Only in the mouth do its nuances reveal themselves. At S’Establit, we defend this idea: tasting is the key to understanding the richness of the oil and its connection to the land it comes from.

A quality EVOO stands out for its purity, its fresh aromas and flavours, and the story behind it. At S’Establit, every bottle reflects our land and our daily work in the olive grove.
