In the 1970s, Jaume Pericás and his wife, Catalina Seguí, took over S’Establit, a finca in one of the most authentic areas of Mallorca. Although the old house was in poor condition, Jaume saw the potential of the land and devoted his life to developing it.
Before focusing on organic extra virgin olive oil production, the finca had several uses, including a duck and rabbit farm, and even a small leather tannery. However, under Jaume’s direction, most of the property was transformed into an orange orchard—his favourite fruit—which, by the time of his passing in 2015, filled the finca with colour from end to end.
For his son Bernat, continuing Jaume’s legacy was essential. Sharing his passion for Mallorcan tradition, Bernat began a meticulous renovation of the finca, maintaining a balance between old and new and preserving the authenticity of the farmhouse and its surroundings.
Today, under his leadership, S’Establit keeps Jaume’s spirit alive by combining tradition with innovation. The old orange orchards gave way to an organic olive grove of more than 1,200 trees, with varieties such as empeltre, picual and arbequina. Thanks to this evolution, we now produce an organic extra virgin olive oil recognised under the Oli de Mallorca designation of origin.
As part of the finca’s growth, Bernat also incorporated an on-site mill, allowing us to control the entire process—from cultivation and harvesting to extraction and bottling. Each bottle of olive oil reflects not only the quality of the fruit, but also the family’s commitment to sustainability, authenticity and the preservation of Mallorcan agricultural tradition.
